I adore breakfast. I love starting my day off with a cup of coffee (or a bellini/mimosa if it’s the weekend!), and a satisfying meal to energize me for whatever lies ahead. Muesli is a typical weekday breakfast for me. I can make a huge batch that will last for a few weeks, therefore not having to put the effort into actually making a meal first thing in the morning. It’s full of healthy nuts, seeds, and a little bit of dried fruit that I otherwise wouldn’t eat everyday. I’ve upped my breakfast game over the past few months, and I swear I’m eating more calories than I used to while not gaining any weight. I think a healthy breakfast sets me off on a positive path and I’m more likely to make healthier choices throughout my day. I also think eating first thing in the morning kickstarts my metabolism, I’ve felt for years that I’ve really had to watch and limit my caloric intake to maintain a stable weight, but by eating first thing, and eating healthier overall, I’ve slowly increased the calories I’m consuming without putting on any pounds. Which makes me a happy girl, because I love to eat.
