This is currently my favorite new meal for summer, I’ve probably made it on a weekly basis for almost a month now…and it’s kind of a rare thing for us to eat something that frequently. I randomly had a craving for chimichurri steak tacos a few weeks ago, which is a bit odd, since I don’t even eat steak. Not one to ignore my cravings though, I improvised and created these delicious little guys instead. At the same time, I did grill up a steak for Zack so he could have a more manly version of these, and since he’s kind of deprived of red meat thanks to me. But honestly, after initially trying them both side by side, he doesn’t even miss the meat version of these since then. Any recipe that can swap out red meat for something healthier and taste just as good is a winner as far as I’m concerned!
