In honor of football Sunday I present you with these: bacon wrapped jalapeno poppers. I was raised in a family where Sundays were spent watching football, eating food, and drinking good wine and beer – all day long.
Throughout the year I long for football season to return. Immediately after the Super Bowl I turn into a lost puppy, not knowing what to do with my Sundays anymore. And as soon as it starts back up, I’m reluctant and moody when asked to do anything that doesn’t involve watching the game. Sundays were meant for football, period.
I made these bacon wrapped jalapeno peppers for a small fantasy football draft party we had at our house the other week. Last year we participated in a league with my family, and this year we decided to start one with Zack’s as well, because few things in life are more enjoyable than talking trash to your family. I thought these would be perfect to get us all in a football mood, they are some irresistible little guys, and I foresee them making many more appearances throughout football season. Bacon Wrapped Jalapeno Poppers
20 Jalapeno Peppers
8oz Cream Cheese
1 Cup Sharp Cheddar Cheese
Preheat oven to 400. Cut jalapenos in halve and scoop out the insides with a spoon or with your hands-be sure to wear gloves if you’re using your hands! Mix the cream cheese and cheddar cheese in a bowl, and stuff each half with the mixture. Cut the strips of bacon into thirds, and wrap around each pepper. Bake in the oven for 20 minutes, or until bacon is crispy.
