I must admit that throughout the past month this blog has been difficult for me to write. With such an important election going on, it was hard to focus on writing blog posts about things that really are so meaningless in the grander scheme of things. In my about me section of this blog I mention how in college I wrote a political blog. To say I’m interested in politics and current events is an understatement. It’s more of an obsession of which I have a hard time escaping from. I chose to blog about the lighter side of life for many reasons, and I do enjoy it. But I’d be lying if I said I don’t yearn to sit and write about more important things, especially lately. I recently allowed myself to go where my mind kept pulling me, and I started writing about the things that really matter to me again. Yet sharing those thoughts here just doesn’t seem fitting, so it’s definitely not something I plan on doing. However I will continue to do both, because writing about and exploring those ideas is something I’ve missed. It’s the best way I know to cope with the passionate feelings I have about things that go on in this world.
On that note, I do have a new favorite recipe to share. My obsession with protein balls, energy bites…or whatever you want to call them, will never cease to continue. To date, these are my favorite ones ever. They’ve been made on repeat for the past 3 weeks, and I don’t see that stopping. The ingredients are things I always have on hand, and they take only minutes to come together. These are perfect as a mid-day snack to get you through to dinner, or as a healthy dessert!
- 1 cup rolled oats
- 2/3 cup coconut flakes
- 1/2 cup natural peanut butter
- 1/2 cup cocoa nibs (or sub mini dark chocolate chips)
- 1/4 cup honey
- 1/4 cup chia seeds
- 1 teaspoon vanilla extract
- Mix all of the ingredients together in a bowl until fully combined.
- Roll the mixture into one-inch rounds and place on parchment paper, then refrigerate until firm.
- Store in the refrigerator in an airtight container.
