One of the best investments we ever made for our kitchen was our whirly-pop stovetop popcorn popper. Making your own popcorn is of course healthier, because you can control the ingredients, but also more fun! I’ve started to branch out from the standard oil/butter/salt combination and this creation is by far our favorite so far. It is just the right of amount of sweet n salty, and oh so addictive. I’m kind of weird in that I hate going to see movies in theatre, and refuse to go with my poor husband. Treats like this are my way of making it up to him, and of course convincing him that our cozy couch and homemade snacks beat going to the movie theatre anyhow! This is perfect for a date night in, or really anytime you want a healthier-ish snack.
- 1/3 Cup popcorn kernels
- 1 Tablespoon coconut oil
- 1/2 Cup dark chocolate
- 1/4 Teaspoon sea salt
- In a stovetop popcorn popper or a medium sized covered pot, add the oil and popcorn kernels over medium heat. Gently shake or turn the kernels until they start to pop, continuing to shake/turn until the popping has slowed to several seconds between pops. Pour the popped popcorn into a large mixing bowl.
- Place the chocolate and sea salt into a microwave safe bowl. Microwave at 30 second intervals, stirring inbetween each time until the chocolate is fully melted. Immediately pour over the popcorn, and store to coat.
- Spread the popcorn evenly onto a parchment lined baking sheet, and sprinkle with more sea salt if desired. Allow the popcorn to sit at room temperature until the chocolate has hardened, then serve or store in an airtight container.
