A few of these little balls are the perfect healthy treat to curb your sweet & salty cravings. I’m one of those people that always wants a little something sweet after a savory meal. To save myself from bad decisions, I keep a batch of these in the fridge and anytime I need a treat I eat a couple of these.
I’m always surprised at how stand-offish people can be when you offer them a “date roll”. I think a lot of people have it ingrained in their head that dates are gross, which is so not true! They’re an amazingly healthy food and the perfect sweetener for desserts. I bet if you tasted these blind you’d never guess that they’re made primarily of dates and cashews. They have a salted caramel flavor which is deceivingly decadent, I swear we don’t think they taste like health food at all. You feel like you’re getting dessert, without the slightest bit of guilt!
- 1 Cup pitted dates
- 1 Cup cashews
- 1/2 Teaspoon sea salt, or more to taste depending on your cashews
- 2 Teaspoons Vanilla
- Add all of the ingredients together in a food processor and mix until a sticky "dough" forms. If it doesn't seem to be holding together well splash in a tiny bit of water and mix for a bit longer.
- Roll the dough into 24 tiny balls. Serve immediately, or store in the refrigerator or freezer.
