If I had to pick a favorite salad to make at home, this would be it. Besides the fact that it’s delicious and we never tire of eating it, it’s also one of the easiest things I make. I always prefer to make my own salad dressings, with one exception: Red Shell Miso Dressing. This is the only store bought salad dressing I will buy, and I use it almost exclusively on this simple combination of greens and pistachios.
In an effort to add more greenery to our diet, we recently started trying to eat more salads prior to the main course at dinner. Salads are normally quite the process for me: washing and chopping up the greens, slicing veggies, making a vinaigrette. Enter this low maintenance salad into my life and suddenly everything is so much simpler. Another thing I mostly avoid is bagged salads, so besides the washing and chopping of the kale required here, there’s not much else to this. Throw some pistachios and sliced green onion on top, drizzle with some dressing, and the salad course is served. Of course, we enjoy this salad so much we often eat a larger version as an entire meal as well. If you can’t find lacinato kale you can try other variations, baby kale, or spinach. Or even romaine I suppose – this dressing is the best and you’ll probably want to start using it on all sorts of salads. - 1 large bunch lacinato kale, cleaned and chopped
- 1/4 cup shelled pistachios
- 3 green onions, sliced
- Red Shell Miso Dressing
- Add the kale and dressing to a large bowl, using your hands massage the dressing into the kale.
- Top with the pistachios and green onions, toss and serve.
