Last week I shared one healthy recipe with the promise of a healthy cookie dough blizzard to come next, so here it is! My greatest weaknesses in summer are ice-cream and gelato, if it were acceptable to eat one or the other every night I have no doubt that I would. Instead, I’ve started to make banana “nice” cream as a substitute. I’m not going to lie to you and say that it tastes just like ice cream, or that it’s a total replacement…it’s just not. But if you’re like me and follow an 80/20 mentality (eat healthy 80% of the time and eat whatever you want the other 20%), then this fits the bill perfectly as a way to curb ice-cream or gelato cravings 80% of the time.
Banana ice-cream is so simple to make. You just cut up ripe bananas, and freeze them. When you’re ready for “ice-cream”, pop them into the blender with whatever other ingredients you’d like, and blend them until you get a substance that is amazingly similar to ice-cream. I keep my freezer stocked with baggies of frozen bananas so I can whip some up whenever I feel like it. This healthy cookie dough blizzard is just one of many concoctions I’ve come up with in making my nice-cream, in the future I hope to share some more of these!
Healthy Cookie Dough Blizzard
2 sliced, frozen bananas
1 teaspoon vanilla extract
Splash of vanilla-flavored almond milk
Handful of healthy cookie dough balls
Mini chocolate chips (optional)
Add the bananas, vanilla, almond milk, and cookie dough balls into a blender and pulse until it’s the consistency of ice-cream. Garnish with mini chocolate chips and serve immediately.
